Peach Basil Spritz
A long, cold drink built on peach basil white balsamic and sparkling water. It reads like a cocktail and does not have to be one.

Ingredients
- 1 tbsp Peach Basil White Balsamic
- 1 tbsp honey or simple syrup
- 2 fresh basil leaves, plus a sprig to serve
- 1/2 fresh peach, sliced
- Ice
- 6 oz sparkling water, chilled
- 2 oz prosecco or gin (optional)
- Lemon wheel, to finish
Let’s make it
- Put the Peach Basil White Balsamic, honey and basil leaves in the bottom of a tall glass and press them together gently with a spoon, just enough to bruise the basil.
- Add a few peach slices and fill the glass with ice.
- Pour in the sparkling water, and the prosecco or gin if using.
- Stir once from the bottom to lift the syrup through the drink.
- Finish with a basil sprig, a lemon wheel and the remaining peach slices.
Why it works
A fruit vinegar does the same job in a drink that it does on a salad: it makes sweetness taste brighter instead of heavier. Stirring once from the bottom mixes it without knocking out the bubbles.
The OTM finish
The Peach Basil White Balsamic muddled into the base of the glass, so the first sip and the last taste the same.
Make it your own
Build it in a pitcher for a crowd (multiply everything and add the sparkling water last), swap basil for mint, or top with lemonade instead of sparkling water.
Quick tip
Press the basil, do not shred it. Torn basil turns the drink grassy and dark.
