Taggiasca olives are typically very small and plump, originating from Taggia, Italy – in the Linguria region – providing its name. They are considered a delicacy as the flesh to pit ratio is very low. The olives for this EVOO are grown in Northern California which has a similar climate to the Mediterranean.
This Taggiasca Extra Virgin Olive Oil is a light yellow color… smooth and mild, with an herbaceous note of green bell pepper and artichoke. There is also a slight nuttiness akin to sunflower seeds.
The smooth and light nature of this EVOO makes it a very versatile oil to use in recipes, and very easy to pair.
